Rainbow Cookies

This festive “cookie” is really a cake. Like many classic petit fours, Neapolitans are thin layers of rich butter cake sandwiched with jam. Almond paste in the batter keeps the cake moist for a week or more at room temperature, a month or more when frozen.

Don’t be daunted by what appears to be a complicated cake. Now that smaller baking sheets (9 x 13 inches) are available, it’s easy to make uniform shaped layers. Divide the work into two stages. Make the cakes and layer them on one day. Ice and cut them another. A rich chocolate coating is traditional in bakeries where these Rainbow Cookies are sold. Chocolate fudge icing would also work well.

Traditional during the end of year holidays, we like to serve these at special occasions year round.

For our professional users, cheesecake is one of the more popular uses for Pistachio or Hazelnut Paste.

Here’s a great creamy cheesecake with delectable pools of pistachio paste. Serve it with fresh strawberries for a lovely spring dessert. Or garnish it with a dusting of shaved chocolate or gobs of fudge sauce for something more decadent.

FROM OUR RECIPE BOX – Nutty Butter Chocolate Sandwich Cookies

Nutty Butter Chocolate Cookie

The gooey cocoa goodness of our Chocolate Schmear™ inspired these sandwich cookies. Our version of an ever popular peanut butter cookie recipe is but one of the many cookies that could be sandwiched with the Schmear™. Chocolate chip, vanilla wafer, sugar, cinnamon or even oatmeal cookies get a lift from a yummy-layer of this intense all-natural filling. When the cookies are stored in an airtight container, the Chocolate Schmear™ center stays moist.

Several pointers for making perfect sandwich cookies. Save time and make uniformly-sized cookies by portioning the dough with a scoop. A small ice cream scoop works or buy a “cookie dough scoop,” a small investment for the usefulness of this tool. Space the cookies evenly on the baking sheet. If you bake a large number of cookies at one time, switch the shelves on which the cookies are baking half way though. This ensures even browning if your oven is inconsistent.

FROM OUR RECIPE BOX – Poppy Butter Bundt Cake

Looking for a moist butter cake that’s not too sweet, something to serve with coffee or tea after a light supper or brunch? Are you a fan of poppy seeds? If the answer is “yes”, then this is the recipe for you. The batter for our buttery Bundt cake surrounds a surprise swirl of poppy seed filling. There’s a nutty quality to the seeds that contrasts nicely with the tangy sour cream and lemon in the batter.

Poppy Butter Mini Bundt Cake

Bake the cake into a sumptuous loaf or in mini pans as we did for the photograph. (This recipe makes 8 mini Bundt cakes or one 10-inch cake.) For chocolate or spice lovers, our Chocolate, Almond or Cinnamon Schmears™ would work well in this recipe. And consider dressing it up with a light sugar or lemon glaze.

The flavors of almond and coffee blend beautifully in these moist and chewy bars.

Espresso Almond Blondies

A touch of espresso glaze adds an extra punch of flavor but can be omitted for a simpler treat. (Chocolate icing would be a welcome enhancement instead.) Rich with chocolate chips, these bars would do well packed in a picnic or in your office lunchbox.

For summer, we wanted an all purpose almond dough, one that can be used with all the succulent fruits of the season. This dough, rich in almond flavor with the slight nuttiness of rolled oats, is one we hope fits the bill. Make this fruit crisp and serve it warm with ice cream.  It can be easily  cut into bars. Crumble this dough over your favorite baking dish full of sliced apples, peaches or pears. Sprinkle it over individual ramekins of fresh berries.

You can even fill this recipe with our Almond, Chocolate or Cinnamon “Schmear”™ Fillings.

FROM OUR RECIPE BOX- Hazelnut Chocolate Fudge Bars

Hazelnut Chocolate Fudge Squares

No lunch box brownie, these sophisticated bars, with subtle hazelnut undertones, resemble chocolate truffles or firm ganache. The Love’n Bake Hazelnut Praline adds nuttiness to the flavor of the bars, which are enhanced with two kinds of chocolate. (Use the best quality chocolate you can find.)

To retain their fudgy quality, bake these bar at a steady low temperature until set and the surface is lightly and uniformly dry. (Touch the surface with your fingertip; if some batter sticks, cool a few minutes longer.) Once cooled and portioned, the bars will keep for a week in the refrigerator or up to a month in the freezer. Just remember to let them warm slightly before serving.
